Awesome recipe - Stuffed Chicken Breasts
Hi again! I'm still going really strong - I've stayed within 28-29 points every day this week so far and I've worked out every day. I'm pleased with the way things have started. Like Katie, I think I'll just post my meals at the end of every week, which will be Sundays for my purposes. But yep, I'm still on track.
I wanted to post this recipe that I tried tonight. Since it's summer, and I've got considerably less to do, I've decided to try out some simple recipes that I can make for myself quickly and easily (have I said this all before? I'm feeling redundant.) Anyway, I actually got this one from a random TV show I was watching - it looked easy enough so I tried it and it was really tasty! I think it took me maybe 20 minutes to prepare, from start to finish.

INGREDIENTS
4 boneless, skinless chicken breasts, trimmed
1/2 cup feta cheese, crumbled
1/2 red bell pepper, julienne sliced
1/2 yellow bell pepper, julienne sliced
1 whole portabella mushroom, julienne sliced
Salt and pepper, to taste
12 toothpicks, soaked in water
1 tablespoon olive oil
INSTRUCTIONS
1. Preheat oven to 400°F.
2. Place chicken breast on a cutting board, cover with plastic wrap and flatten by hand or with a rolling pin until 1/2 inch thick.
3. Remove plastic, layer chicken with feta, peppers and mushrooms. Roll up and secure with toothpicks.
4. Season chicken rolls with salt and pepper and sear over high heat in a large, oven-safe skillet for about 2 minutes on each side.
5. Place immediately into oven and bake for 10 minutes. Let cool for 8-10 minutes. Remove toothpicks and slice. Serve immediately.
I altered it a little - for one, I didn't make 4 of them. I used reduced fat feta cheese, and only 1/8 of a cup - it was plenty. Also, I HATE mushrooms, so I substituted green pepper, spinach, and chopped green onions instead. I also used a little bit of Emeril's Chicken Rub on the outside of the chicken breast for extra flavor. I imagine that you could probably use all sorts of different things in this recipe; after all, it's practically impossible to screw up when a chicken breast is your blank canvas. Anyway, one of these little guys was 4 points. I'm going to cook them for my family when they come to visit this weekend.
