I feel OK about this week. It was certainly healthier than the last one, that's for sure. I haven't been doing a very good job of eating my fruits and vegetables - some here and there, but not as much as I should. I just HATE vegetables, so damn much. I can feasibly eat lettuce, spinach, tomatoes, corn (if that counts), and bell peppers. Anything else...forget it. I wish I liked broccoli or cauliflower or asparagus or whatever, but I don't. I just need to do a better job incorporating the ones I do like. I do think that part of the reason is that when I went shopping last week, I really didn't get much vegetables because Wal-Mart's produce section is slim pickings. I should have gone to Jewel...but I forgot. Ah well.

Only made two recipes this week, because I forget this vital fact: if I make it all, I have to eat it all. Like, the deep dish pizza casserole thing...6 big servings. Took me the whole week (and I still have one piece left.) It wasn't bad - definitely the kind of thing that got better as it "sat" in the fridge. It was too soupy the first time around and I actually hated it, but it reheated really well (in the oven) and I didn't mind eating it for dinner every night of the week, almost. Definitely a good school year recipe. Next time, I will experiement with ways to make it less points. I mean, 9 is a ton...and the servings were actually a little too big. I might divide it into 8 portions and use less cheese when I make it again.

On Saturday I made slow cooker salsa chicken for my family. I have never had a softer, juicier chicken breast...it was delicious. I sort of "guesstimated" on the points; I know salsa is pretty low and I couldn't tell how much of it had seeped into the chicken/was in the sauce I actually ate. I think 6 is accurate because the chicken breasts I used were very, very big. Anyway, it was seriously delicious. My aunt and grandma went CRAZY. Here is the recipe, in case you're wondering. (oh, I forgot to use the cream of mushroom soup, completely by accident, but it still tasted great without it...i don't know why you'd need it.) It took me maybe 10 minutes to put together in the morning...something you can easily do in the morning.

So two more successful recipes this week. I'm really enjoying cooking for myself! A friend suggested I try cookingfor2.com, which is funny because I'm only 1, but I get the idea...smaller portions! So I don't *have* to eat the same thing every damn day! Haha. This week I'm going to try the chipotle lime marinade I bought last week with a chicken breast - just one, because I'm not sure if I'll love this marinade. And I'm going to make feta-stuffed turkey burgers because I'm craving burger-y things lately. Typing this is making me hungry...

Exercise was pretty good this week. I worked out 5 days and increased the length of my workout - now comes complete with a ridiculous amount of hills. Stupid hilly neighborhood. Today I cleaned my apartment from top to bottom - scrubbing floors, dusting, laundry, toilet, the works - for nearly 4 hours. And since I felt guilty for not working out yesterday, THEN I went for a walk. Seriously, I thought I was dying at the end, because I'm lame like that.

I need to push myself to begin a strengthening/toning routine in my life, but good god, I just don't want to. I don't mind cardio because it at least keeps me busy, but lifting weights, to me, is such a time waster. Now, I know that it's not, but it feels like I could be doing a million different things during that time. 3 days this week. That's my goal.

This week I'm planning to spend a lot of time at school to get some stuff done for the year. I have 2 weeks until Ellie, Molly, and Ashley visit, during which I will get nothing done, and then BAM, school. So I think if I just push myself this week I can relax when the girls are here and not feel bad.

OK, goals:

1) keep drinking!! (eventually i'll get used to it...right?)
2) two new recipes
3) more fruits and vegetables
4) strengthening 3 days/week
